Vibrant, mineral-accented aromas and flavors of strawberry, cherry and blood orange, with a sexy floral quality gaining strength with air. This is one of our most delicate and refined Rosé Champagnes. A combination of 70% Chardonnay, 23% Pinot Noir and 7% Bouzy Rouge Pinot Noir. Shows very good energy and clarity, finishing powerfully, with lingering minerality. Goes very, very well with shellfish. Lobster fans, you have found your perfect bottle.

Pierre Paillard is a small grower with eleven hectares of vines, all located in Grand Cru Bouzy. They are unique because of their high percentage of Chardonnay in an area known for Pinot Noir (40% Chardonnay/60% Pinot Noir). The winery has been in the family for eight generations and they have been bottling under the Pierre Paillard name for four generations. They farm sustainably and use spontaneous yeast fermentations. The wines benefit from extended aging on the lees.
